We will supply 1 x 70kg Ensors Gloucestershire Woodland free range organic pig, this will be roasted on our charcoal spit machine, this will guarantee faultless results time after time, the pig will take 8 hours to cook, we spike, prepare and cook on site all day until the pig is cooked, Once cooked it will be removed from the machine and allowed to rest for 20 mins, after that we will carve and serve the guests as they come up to the buffet table. The pig will be served with the following:-

Fresh soft & Crusty rolls, French sticks, Apple sauce, Sausage meat and apricot stuffing, and English mustard.

Salads

Richly dressed coleslaw

Potato salad with diced red onion and chopped chives

Pasta salad with sundried tomatoes, baby spinach, pine nuts, with a sweet chilli and lime dressing with parmesan shavings.

Mixed Leaf salad with cherry tomatoes, cucumber, red onion, with a sweet chilli and mango dressing finished with Garlic croutons

Tomato and Mozzarella salad with fresh basil with a truffle infused olive oil.

Profiteroles with chocolate sauce

Chocolate and salted caramel cheesecake

All of the food will be served by way of a buffet this will include the following: 1 x 3m x 3m catering marquee, all tables for food preparation and serving, linen table cloths, Chafing dishes and gels, serving platters, plates and cutlery, bread display and all other serving items on the buffet table. Including 1 x Chef 1 x serving.
