The thighs are then slowly smoked for 3 hours to give a moist and sticky finish; they are mopped whilst cooking with a home made brown sugar BBQ Sauce

As part of the BBQ Package
All of the food will be served by way of a buffet this will include the following:-
- All tables for serving
- Linen Table cloths for buffet
- Chafing dishes and gels
- Serving platters and cutlery
- Bread display and all other serving items on the buffet tables
- Catering Gazebo
- Very high quality Compostable plates, cutlery and napkins
For the above mentioned the staff requirements are as follows:-
- 1 x Head Chef for cooking and general set up
- 1 x Chefs assistant and service
